Himebayashi, founded in 1941 in the Shirokawa district of Ehime, is Japan's first maker of chestnut shochu and the only dedicated shochu distillery on Shikoku. Ehime ranks third in Japan for chestnuts, and the house uses 100% local Shirokawa fruit — Okuiyo blends Ehime chestnuts with naked barley, while Okuriokura is pure local chestnut. Distillery tours are possible.
