Goto Shuzojo, founded in 1677 in Yame, is the oldest brewery in the Chikugo district, now in its thirteenth generation. Using subsoil water of the Oku-Yame hills, it makes sake and rice, barley and sweet-potato shochu — including a barley shochu genshu aged over ten years in clay pots inside a tunnel of the old JNR Yabe railway line.
