Mutemuka, founded in 1893 in the mountains above the upper Shimanto River, bears a name meaning unadorned and true of heart. Its celebrated chestnut shochu Dabada Hiburi is distilled slowly at low temperature with 50% chestnut — named for hiburi, the traditional fire-swinging ayu fishing of the Shimanto, and daba, the gathering places along its banks. Kura visits are possible in the river valley.
