Aso Honten, founded in 1868 in the green spring-water country of Shonai in Yufu, makes sake and shochu by traditional handwork. Its Bungo Fuji takes the affectionate name of Mt. Yufu — Oita's own Fuji — with the shochu Aso Fujiko a local favourite.
