Ikehara Shuzo, founded in 1951 by Kokichi Ikehara in Ishigaki's Okawa quarter, brews in a red-tiled old house by unhurried tradition. Its Shirayuri (White Lily) is famous for a wild, singular flavour that drinkers either adore or argue about — and it took a top gold at a world competition in 2021. When closure loomed, grandson Yu Ikehara took over in 2013 and carried the kura on.
