Kokusen Awamori was founded in 1958 by three partners on Yonaguni, Japan's westernmost island. The toji carries every step by hand from koji to bottling, with no artificial additives; Donan — 'Yonaguni' in the island tongue — runs from 25 degrees to the island's famous 60-degree hanazake, including a 17-year kusu of which only some 900 bottles exist.
