Nagayama Shuzo, founded in 1887 in the Asa district, spans sake, shochu and wine, with the Yamaguchi Winery on its grounds. Its rice shochu Netaro — named for the local folk tale of the boy who slept three years — was developed in the Showa 50s (late 1970s to early 1980s) with the prefectural technology centre and Yamaguchi University, fragrant and full of rice umami.
