Kin Shuzo, founded in 1949, named its Tatsu for the founder's dragon-year ancestor and stores more than half its production for ageing. Since 1988 it has used the Kin limestone cave as Japan's first cave kusu cellar — over 13,000 jars sleep in its constant cool — while the brewing splits hard water for the mash and soft for dilution. It even made Japan's first taro shochu. The cave cellar can be visited.
