Since 1949 — 石垣市, Okinawa
Takamine Shuzosho, founded in 1949, looks up at Mt. Omoto — Okinawa's highest peak — and out over the famous Kabira Bay. Everything is hand-made: koji rested two nights into old koji, and distillation over direct flame in a traditional ground kettle, on natural water of the Omoto range. Two minutes' walk from Kabira park; visitors welcome.
