Matsunoizumi Shuzo brews in Asagiri, at the heart of the Kuma valley, since 1875. Its founder Bunsuke Matsuoka chose the site for the famed Gekkosui — moonlight water — filtering through the granite of Mt. Shiraga at the Taniyakushi temple spring. The house brews its Suikyo Mushi with ginjo yeast and special spring-water methods.
