Oishi Shuzojo, founded in 1872 in Mizukami at the uppermost reach of the Kuma River, brews under fifth-generation head Choichiro Oishi at the foot of sacred Mt. Ichifusa. The house began cask ageing some fifty years ago — long before it was fashionable — and its amber, long-rested rice shochus now sit beside rice-shochu liqueurs and whisky.
