Takahashi Shuzo, founded in 1900 in Hitoyoshi, brews Hakutake and Shiro — the defining brands of Kuma shochu, the rice shochu of the Kuma valley. Under its creed of good rice, good water, good people, it runs three production sites — the Taragi distillery, the Hakutake research institute and the Tano whisky distillery in a reborn village school — with capacity of 100,000 koku. The Kuma Shochu Museum Hakutake Denshogura welcomes visitors.
