Takata Shuzojo began shochu making in 1902 under ninth-generation head Matasuke (Kanji Takata). Keeping the Kuma tradition, it also experiments where few do — brewing shochu with flower yeasts, as in its Asagiri no Hana, while the founding label Akiho lives on.
