Yamatoichi Shuzomoto was founded in 1898 by Chimatsu Okada in Hitoyoshi. Its signature is unique in Japan: onsen shochu, brewed with mineral-rich bicarbonate hot-spring water rising from 500 metres beneath the kura. A milk shochu made with fresh local milk pushes the experiments further.
