Kinoshita Jozo, founded in 1862, is among the oldest Kuma shochu houses, licensed as a chaya (teahouse) by the Sagara domain. Its single-minded label Bunzo carries the name of founder Bunzo, sung of in the folk song Rokuchoshi, and the methods are unchanged: hand-made koji, clay-pot fermentation, atmospheric distillation.
