Mori Shuzojo was founded in 1895 by Kokichi Mori under the shop name Komatsuya, in Hirado's old international port. The fourth-generation head brews to a theme of continuity and connection, expressing Hirado's terroir with spring water of Saikyoji temple and local rice — in the sake Hiran, named for Hirado's ancient name, and its shochu.
