Yamasaki Honten Shuzojo, founded in 1688 in Shimabara, has devoted itself to brewing since 1884 and first distilled shochu as early as 1702. On the famous spring waters of Unzen it now makes more than a hundred products — sake, shochu and liqueurs — with an IWC 2012 award among its honours.
