Inoue Shuzo, founded in 1894 amid the Obi cedar forests of Nichinan, developed Japan's first 100% vacuum-distilled imo shochu in 1983. It brews sweet potato, barley, buckwheat and rice shochu with the Yowara spring — chosen among Miyazaki's 21 famous waters in 1993 — and, remarkably, farms sturgeon for caviar as well.
