Kirishima Shuzo, founded in 1916 in Miyakonojo, has held the number-one spot in honkaku imo shochu sales for nine consecutive years. It uses only Kyushu sweet potatoes, Japanese rice and the underground water of the Kirishima range, with capacity around 200,000 1.8-litre bottles a day. Black-koji Kurokirishima (1998) and Akakirishima (2003) lead the range; the Kirishima Factory Garden offers tours, a craft brewery and a bakery.
