Osuzuyama Distillery, founded in 1998 as Kuroki Honten's mountain kura, sits thirty minutes into the hills above Takanabe. Ultra-soft mountain spring water, hand-made koji and wooden vessels of local Obi cedar shape its animal-named spirits — Yamaneko (wildcat, sweet potato), Yamazaru (monkey, barley) and Yamasemi (kingfisher, rice) — handwork no machine could copy.
