Sakuranosato Shuzo, founded in 1994 as a subsidiary of Inoue Shuzo, matures its shochu three years and more in some 5,000 clay pots stacked through a three-storey red-brick warehouse, marrying computer control with human judgement. Its Shochu Dojo — a recreation of a Meiji-era kura — offers tours, hands-on experiences and even original blending, on spring water of the Inohae gorge.
