The Shochu Nichinan Cooperative, formed in 1984, unites five local houses — Kyoya, Kodama, Sakuranomine, Furusawa and Matsunotsuyu. Its 12-degree Kanpai Nichinan was created for the city's 2013 toast ordinance: a mellow, low-strength shochu built for Nichinan's table.
