Oura Shuzo of Miyakonojo, founded in 1909, is a small family kura whose fourth-generation head Shinichi Oura came to distilling from life as a Buddhist monk. Koji is made by hand with wooden boxes and futon in the old way, fermentation runs in clay pots, and its brown-rice shochu — developed in 1975 — is made by only a couple of kura in all Japan. A glass wall lets visitors watch the work.
