Watanabe Shuzojo, founded in 1914, is the only kura in the Tano district of Miyazaki. Fourth-generation head Koichiro Watanabe grows Koganesengan on three hectares of the house's own fields — about eighty percent of its ingredients — and brews on the theme of sake from the land that makes it: soil left on the potatoes, wild yeasts and native microbes at work, and about three years of rest before release.
